Heaven and Earth – Himmel un Aed

The Rhenish dish Himmel un Äd (“Heaven and Earth”) derives from the fact that apples on the trees are close to heaven, compared to “Erdäpfeln”, as potatoes are called in old German.

So basically this dish consists of potatoes and apples, in regions around Westphalia, Silesia and Lower Saxony mashed potatoes and applesauce are served. In the Rhineland, diced potatoes and apples are often cooked together rather than mashed.

The potato and apple mixture is served with fried blood sausage (met Bloodwosch), fried onions and bacon or liver sausage. In the Rhineland, Westphalia and Lower Saxony it is served up.

Ingredients & Shopping list

  • 1 kg floury potatoes
  • 6 apples
  • 500 g shallots
  • 1 blood sausage
  • 250 ml milk
  • 3 tbsp lemon jucie
  • 50 g butter
  • 1 tbsp sugar
  • lard
  • flour
  • ground nutmeg
  • salt

Preparation

  • Boil potatoes until soft, mash and season with butter, milk, nutmeg and salt to make mashed potatoes.
  • Peel and core the apples and cook them with sugar, lemon juice and a little water until soft. Mash them and mix with the mashed potatoes. Or keep them separate.
  • Peel the shallots, cut them into rings and roast them in the pan with the lard. Fry the black pudding in it.

Serve all together.
