Ahle sausage

The Ahle Wurst is also known under the names Ahle Wurscht, Ahle Worscht, Ahle Worschd and Rote Wurst. This typical regional speciality comes from northern Hesse.
During traditional home slaughtering, high-quality meat cuts are processed with special spice ingredients to make this sausage. Translated, the name means nothing more than “old sausage”, alluding to the average 2-month maturing period.
The muscle-bacon mixture from the pig is filled either in pig intestine or beef rim intestine.
