Dandelion is one of the first fresh greens that nature offers in the form of wild herbs in spring. For a salad, the plant must be pricked even before it flowers. After that, the leaves are no longer usable for salad. Alternatively, you can also buy the leaves at the weekly market.
Dandelion has a savory, slightly bitter taste and is very healthy. The ingredients have a blood stimulating and diuretic effect.

- 500 g dandelion leaves
- 2 hard boiled eggs
- 1 onion
- 6 tbsp vinegar
- 4 tbsp oil
- 2 tbsp water
- 1 pinch soluble bouillon powder (e.g. Alnatura Gemüseboullion without yeast extract)
- Pluck the leaves into pieces, wash and then soak for 30 minutes. This removes the bitter substances. Then remove from the water and pat dry.
- Peel the hard-boiled eggs and pass the yolks through a hair sieve. Alternatively, mash well with a fork. Mix with vinegar, oil and water to a sauce. Season with salt, pepper and stock powder.
- Finely dice the egg white and onion and fold into the sauce together with the lettuce leaves.
