Black Forest Ham is a smoked raw ham made from pork. Typical is its black-brown rind.
Through curing, special herbal seasoning, brine, cold smoking with fir or spruce wood and hanging in the air, the meat matures in up to three months to a ham with a typically strong taste.
Due to its production method, the ingredients and the region, the name is a protected geographical indication (PGI) of the European Union. The original is produced in the Black Forest region which belongs to the federal state of Baden-Württemberg.
