Dandelion blossom honey

In May the flowers of the dandelion sprout. A very aromatic dandelion syrup can be made from the flowers.


My grandma called it dandelion honey. Anyway: just try it. If you have the possibility to get enough of the sunny yellow blossoms together you can try the recipe stated below. Otherwise, just convert the quantities.
If the plant is not yet in flower, you can prepare a delicious dandelion salad from the leaves.

Ingredients & Shopping list

  • 250 g dandelion flowers (do not collect next to busy roads)
  • 750 ml water
  • 1 kg sugar
  • 1 organic lemon



  • Before preparation, pluck the flowers from the stems and soak the flowers overnight in a sufficient water bath. This way all the unwanted insects crawl out. Then rinse the flowers again under running water.


  • Boil the flowers and the lemons in the water over low heat for 30 minutes.
  • Then strain the flowers and lemon pieces over a sieve and squeeze again.
  • Now put the water back on the stove and add the sugar. Simmer for about 15 minutes at reduced heat.
  • Pour into clean jars and screw down.

Tips & Hints

The syrup has a shelf life of over 1 year if kept in a cool place. Assuming he hasn’t been snacked on first.
