Harzer Roller is a very low-fat speciality made from sour milk cheese. Matured with yellow or red smear cultures, it is made from cow’s milk and is thus similar to the hand cheese from Hesse. It is extremely well suited for a healthy diet, as it consists of 30% proteins and max. 10% fat in the dry matter . This yellow cheese has no rind, but is typically seasoned with caraway seeds.
By the way, the cheese owes its name Harzer Roller to its shape as small round flat pieces or as a roll-shaped stick cheese. And of course of its origin: the Harz.
This specialty is usually eaten as a topping on a dark bread. Or pickled and marinated with oil and onions like the Hessian Handkäs with music.

Ingredients & Shopping list
- 1 Harzer Roller Stange
- 1 Frühlingszwiebel
- 1 EL Kräuteressig
- 3 EL Öl
- Pfeffer, Salz
- Den Käse würfelig schneiden.
- Aus den übrigen Zutaten eine Marinade bereiten und abschmecken.
- Den Käse mit der Marinade vermengen und 20 Minuten durchziehen lassen.
