Mashed potatoes with buttermilk

A simple and quick recipe from northern Germany

Mashed potatoes are probably eaten in one way or another in every region. In Mecklenburg-Western Pomerania the Stamptüfften (Tüfften = potatoes) are served with buttermilk and fried bacon cubes. The buttermilk is not necessarily mixed in, but poured over the mashed potatoes in the plate.

Ingredients & Shopping list

  • 1 kg potatoes
  • 150 g bacon
  • 100 g onions if desired
  • 400 ml buttermelk

Preparation

  • Peel and chop the potatoes and cook until soft.
  • In the meantime, peel the onions and dice them together with the ham. Fry in a pan until crispy.
  • Drain the cooking water and pound the potatoes dry. Alternatively, mash with a fork.
  • Mix the mashed potatoes with ham and onions. Arrange on deep plates. Add the buttermilk.

Tips & Hints

In some areas the buttermilk is mixed with the potatoes before serving.
