North Frisian buttermilk soup

A simple but hearty dish is the North German or Frisian buttermilk soup with smoked bacon, pears and raisins. Well suited for the cold season.

Ingredients & Shopping list

  • 500 ml buttermilk
  • 250 g streaky smoked bacon
  • 500 g pears
  • 50 g raisins
  • 2 tbsp flour
  • 3 tbsp sugar

Preparation

  • Put on the bacon with 500 ml of water, cover and simmer for 2.5 hours.
  • Peel, quarter and core the pears and cut into fine wedges. 
  • Remove the bacon from the broth, pears and raisins infuse for 10 minutes.
  • In another saucepan, bring buttermilk, flour and sugar to a boil, stirring constantly. Add bacon broth with pears and raisins.
  • Leave to infuse in the open pot for another 10 minutes.

Tips & Hints

Serve the buttermilk soup in deep plates and add the sliced bacon.
