Onion Tart

Onion tart is traditionally offered and eaten mainly in autumn. This pastry is particularly popular at wine festivals in the wine-growing regions and in Thuringia. These are, for example, the Palatinate, Hesse and Franconia, but also the Nahe, Baden, the Rhine and Moselle regions. The savoury cake is then offered with, for example, a Federweißen (a young wine with a low alcohol content) or Suser (apple cider).

The onion cake is a square or round sheet cake made of yeast dough with a topping of onions and caraway seeds. In the Swabian version, bacon cubes are also used.

At the Weimar onion market, one of the largest regional festivals in Thuringia, the festival even opens with the cutting of the onion cake.

Unlike the tarte flambée, the onions are not used raw here, but are steamed in butter in small pieces. Only then are they mixed with the remaining ingredients and the mixture is seasoned with cumin and salt. The caraway is supposed to improve the digestibility of this rather fatty dish.

Recipe Thuringian onion tart

Ingredients & Shopping list

Yeast dough

  • 250 ml milk
  • 300 g flour
  • 100 g butter
  • 25 g fresh yeast or 10 g dry yeast
  • 1 pinch salt

Covering

  • 1 kg onions
  • 1 l milk
  • 80 g semolina
  • 100 ml oil
  • 1 egg
  • 10 g caraway
  • 5 g salt
  • 125 ml milk

Preparation

Yeast dough

  • Mix all ingredients into a dough and let rise for 1 hour. The dough should approximately double in size.

Covering

  • Cook a porridge from milk, semolina and salt. Let this cool down.
  • Peel and coarsely grate the onions. Sauté in the oil with a pinch of salt until translucent.

Onion Tart

  • Roll out dough to a sheet size and let rise for another 15 minutes. Spread the porridge on the dough. Spread the steamed onions evenly on top.
  • Mix the egg with the 250 ml of milk and pour over the onions. Finally sprinkle the caraway seeds on top.
