Original Thuringian Rostbratwurst

Like many regional specialities, Thüringer Rostbratwurst (called Roster by the Thuringians) is not the same everywhere. In each area or place of Thuringia the seasoning is a little different or sometimes fine or sometimes coarse is put into the casings.
It is traditionally prepared on a charcoal grill. It comes with mustard and a bun, but definitely not ketchup.

The oldest known and written recipe for fried sausages dates from July 2, 1613, from the “Ordnung für das Fleischerhandwerk zu Weimar, Jena und Buttstädt. Here, the use of veal was still punishable.

Today, pork and veal are used, as well as salt, pepper, nutmeg, sometimes marjoram and spices for the very own mixture. From this a very fine or also coarse-grained sausage meat is produced, which is filled into pig casings or Saitlinge. The sausages are sold raw or scalded and must be at least 15 cm long according to EU regulations. Since 2004, the term ‘Thüringer Rostbratwurst’ has also been protected as a geographicalindication (protected geographical indication, PGI).

Ingredients & Shopping list

  • 500 g pork
  • 500 g veal
  • 10 g salt
  • 1 dash soup seasoning
  • 1 egg
  • 1 small roll (soaked in milk)
  • 2 tsp starch flour
  • 1 tsp grated zest of an organic lemon
  • Casings for filling

Preparation

  • Put the meat through the meat grinder with a medium perforated disc.
  • Mix the mixture thoroughly with the other ingredients.
  • Fill the sausage mixture into the pork casings and twist off any size.
