Quarkkeulchen

a sweet speciality from saxony

The somewhat peculiar name Quarkkeulchen of the popular Saxon dessert is derived from the Middle German Kaule (ball). The dumplings made of curd dough are fried flat in the pan. The basis is a sweet dough made from curd cheese and potatoes. In the Erzgebirge they call it Quarkkließe.

Ingredients & Shopping list

  • 500 g boiled potatoes from the previous day floury
  • 250 g curd
  • 50 g flour
  • 75 g sugar
  • 2 eggs
  • Oil or clarified butter for frying

Preparation

  • Peel the cooled potatoes and press them through the potato ricer.
  • Knead with the remaining ingredients (except the oil) to a smooth dough. If the dough is still too wet, knead in some more flour.
  • Shape the dough into "small balls". These are about 1 cm thick and 7-8 cm in diameter.
  • Im heißen Öl goldbraun braten.

Tips & Hints

Traditionally, apple sauce is eaten with the dumplings. If you like, you can knead sultanas into the dough.
If you don’t add sugar to the dough, you can also serve it with a tomato salad or as a side dish with meat.
