Rhubarb dessert

Rhubarb is a vegetable, not a fruit. Even though the popular stalks are mostly processed like fruit, the rhubarb is a knotweed and therefore a vegetable. It contains a lot of fruit acid and is therefore always prepared in combination with sugar. There are green- and red-stemmed varieties, with the red-stemmed ones containing less acid.

The last date for harvesting is around St. John’s Day (Johanni), i.e. on 24 June. Then the contained oxalic acid increases strongly and it is recommended not to eat rhubarb harvested after that.

Ingredients & Shopping list

  • 750 g rhubarb
  • 200 g sugar
  • 1 cinnamon stick
  • some grated lemon peel or lemon peel flavouring (from organic lemons)
  • 1 cup water or white wine

Preparation

  • Peel the rhubarb and cut the stalks into short pieces.
  • Bring sugar, water and spices to a boil.
  • Add the rhubarb pieces and bring everything to the boil briefly 2 times.

Tips & Hints

Let the compote cool a bit, put it in a bowl and let it get completely cold.
