Teltow turnip – teltower ruebchen

Teltower Rübchen: Not far from Berlin (in the federal state of Brandenburg) there is a place and a region of the same name: Teltow. Here in the Märkische Sand, the small white turnip was already cultivated 300 years ago (as a poor man’s food).


Later, privy councillor Goethe and also the French court appreciated the approx. 5 cm long delicacy from the sand of the Mark Brandenburg. Classically prepared, the small tubers are fried in sugar caramelized with butter and deglazed with meat broth.
The fine root vegetable is offered seasonally: Sowing takes place in August, harvesting is from October.

Recipe Teltow turnip

These turnips are a Brandenburg speciality. Very suitable as a side dish.

Ingredients & Shopping list

  • 500 g Teltow turnips
  • 250 ml meat broth
  • 50 g butter
  • 1 tbsp sugar
  • 1 tbsp flour
  • salt, pepper


  • Peel the turnips, halve the small ones, quarter the larger ones.
  • Melt the sugar in the pot. When it's nicely browned, remove the pot from the heat and add the butter.
  • Once the sugar is dissolved, put the pot back on the stove, add the beets and let them brown as well.
  • Then sprinkle with flour and deglaze with the broth,
  • Simmer for 15-20 minutes.
  • Finally, season with salt and pepper to taste.
