Ingredients & Shopping list

  • 200 g raw sauerkraut
  • 40 g butter
  • 600 ml broth
  • 35 g flour
  • 1 tsp chopped caraway seeds
  • 1 cup sour cream
  • Salt, pepper, sugar (to taste)


  • Pour the broth into a pot. Chop the sauerkraut a few times and add to the broth.
  • Cook everything over medium heat for 20 to 25 minutes.
  • In a pan, make a light roux with butter and flour. (Melt the butter and stir in the flour). Add the roux to the soup. Stir constantly to thicken the soup.
  • Add the caraway seeds and sour cream. Season to taste with salt, pepper and sugar.

Tips & Hints

Serve with toasted white bread.
