Weimar onion market bread

The onion market bread is a specialty from Weimar. The onion market has been held here every year on the 2nd weekend in October in Thuringia for over 360 years. Also known as the Zippelmarkt. The onion (zippel), which can be found in many Thuringian dishes, is celebrated.


Vendors tie onions into sophisticated onion braids, which visitors often buy as decorations. In addition to the classic Thuringian onion cake , there is also a specialty on this market: onion market bread.

A toasted slice of farmer’s bread is baked with a mixture of onions, bacon, leek, cheese and spices. It is quick and easy to prepare. With the following recipe you can prepare this hearty snack at home.

Ingredients & Shopping list

  • 150 g streaky bacon
  • 50 g oil
  • 300 g onions
  • 150 g leek
  • 1 bunch chives
  • 1 grated clove of garlic
  • 150 g grated Edam or Gouda cheese
  • 2 eggs
  • 4 slices of fresh farmer's bread
  • salt, pepper, nutmeg, caraway seeds


  • Clean the onion and leek. Cut the onions into strips and the leek into rings.
  • Dice the lean bacon and leave it in the heated cooking oil. Add the leek and onions and sweat well. Add the garlic and chives rolls.
  • Let everything cool down.
  • In the meantime, grate the cheese. Beat the eggs and mix with the spices. Pour into the cooled mass and stir everything evenly.
  • Lightly toast the bread slices and brush evenly with the mixture.
  • Baked in the grill until crispy.

Tips & Hints

A well-seasoned herbal sour cream or creme fraiche and a freshly tapped beer or a glass of wine go well with it.
