If you can get hold of fresh elderflowers or have them in your own garden, you should definitely try the syrup. Very well also suitable for flavouring dishes.

Ingredients
30fully opened elderflower umbels
2organic lemons
60gcitric acid
2,4kgsugar
3ltrwater
Instructions
Bring the water and sugar to the boil while stirring. After a short boil, the sugar is dissolved. Let the syrup cool down lukewarm.
Remove the flower stalks from the flower heads and place in a large bowl. Place lemon wedges over the flowers and sprinkle with citric acid.
Carefully pour the lukewarm sugar mixture over it. Cover the bowl and let it steep for 5 days in the refrigerator.
Then strain the mixture. To do this, place a cotton cloth in a sieve so that all flowers are held back.
Boil the syrup for another 5 minutes.
Fill everything into bottles that have been rinsed with hot water, close tightly and store in the refrigerator.
Tipps & Hinweise
Tastes great as a lemonade diluted with water, for flavoring sparkling wine or desserts. Or as a hot drink in winter. Then the syrup is poured with hot water.
