Ingredients
500gdandelion leaves
2hard boiled eggs
1onion
6tbspvinegar
4tbspoil
2tbspwater
1pinchsoluble bouillon powder (e.g. Alnatura Gemüseboullion without yeast extract)
Instructions
Pluck the leaves into pieces, wash and then soak for 30 minutes. This removes the bitter substances. Then remove from the water and pat dry.
Peel the hard-boiled eggs and pass the yolks through a hair sieve. Alternatively, mash well with a fork. Mix with vinegar, oil and water to a sauce. Season with salt, pepper and stock powder.
Finely dice the egg white and onion and fold into the sauce together with the lettuce leaves.
