Ingredients
100gbutter
1egg yolk
1tsplemon juice
white pepper
Instructions
Melt butter gently in a saucepan (do not brown).
In another saucepan, heat water until hot but not boiling.
With a whisk, whisk together the lemon juice and egg yolks. Then place the mixing bowl in the prepared water bath. Continue to beat the mixture until it is fluffy.
Remove the bowl from the water bath and add the melted butter drop by drop. Keep whisking until all the butter has been incorporated.
Then season to taste with salt and pepper.

Until serving, the sauce can be kept warm in a water bath.
