Ingredients
300-400gcooked potatoes (e.g. potatoes left over from the previous day)
1onion
150gsausage (cooked ham, salami, Vienna sausage)
100ggherkinseggs
3-4salt, pepper, nutmeg
Instructions
Cut the potatoes into pieces or slices.
Peel the onion, halve it and cut it into fine rings.
Cut sausages or boiled ham into slices or strips as well.
Fry the potatoes in a hot pan with a little oil for about 10 minutes, then add the onion and continue frying until the onion is also toasted. Add salt and pepper.
Then fold in the cucumber and sausage/boiled ham.
Beat the eggs until foamy and season with salt, pepper and nutmeg.
Pour the egg mixture over the potatoes and allow to set over a low heat.
