The resulting creamy sauce is now refined with the cream and seasoned with salt, pepper, sugar and lemon.
Now add crab, blanched peas and carrots. Mix everything together carefully and, above all, heat gently. Don't cook!

Arrange the crab ragout on plates and serve with boiled or dill potatoes.
